The Yummiest Chinese Egg Roll Recipe 雞蛋卷食譜

There are over 100 ways to cook an egg. Today let’s cook one of my favorite ways, Chinese Egg Roll! It’s so yummy!

 

4 eggs
1 tablespoon of water
1/2 of a teaspoon of salt
1/4 of a cup of mixed vegetables
1 tablespoon of vegetable oil

 

In a bowl, whisk 4 eggs, add 1 tablespoon of water, 1/2 of a teaspoon of salt, 1/4 of a cup of mixed vegetables, and mix well.

 

Heat a pan and coat it with 1 tablespoon of vegetable oil over medium heat. Add half of the egg mixture to the pan. Let it cook for about 2 minutes until it’s half way done. Then roll it up with a spatula until it’s about half way rolled up. Next, slide the egg roll to the back.

 

Add another half of the remaining mixture. Let it cook for about 2 minutes until it’s half way done. Then roll it up with a spatula until it’s about half way rolled up. Next, slide the egg roll to the back.

 

Add the rest of the mixture. Let it cook for about 2 minutes until it’s half way done. Then roll it up completely with a spatula. Rest it a few minutes before slicing it.
