Ingredients:
½ pound mini sweet peppers, or other types
1 bundle enoki mushrooms
¾ cup vegetable stock, or water
2 tablespoons soy sauce
1 tablespoon vegetarian oyster sauce
1 teaspoon cornstarch
1 tablespoon avocado oil, or other high-smoking point oil
3 garlic cloves, minced
1 ½ tablespoons scallions, minced
Instructions
To prepare:
- Cut off the ends of each mini sweet pepper, and remove the seeds. Do the same with the rest.
- Slice off the end of the enoki mushrooms.
- Stuff some enoki mushrooms in each mini sweet pepper. Do the same with the rest.
To cook and serve:
- In a bowl, add the vegetable stock, soy sauce, vegetarian oyster sauce, and cornstarch. Whisk.
- In a pan over medium heat, add the avocado oil, and place the enoki stuffed sweet peppers inside. Pan-fry until lightly browned for about 1 minute. Flip, and pan-fry for another 1 minute.
- Add the garlic and pour the sauce into the pan. Turn to low heat, cover the lid, and simmer for about 5 minutes.
- Lastly, garnish with scallions. Serve and enjoy!
