Step-by-Step: Let’s Cook

Step 1: Prepare the chicken

Trim excess skin if needed. Lightly score the meat side about 1 inch apart without cutting through. Pat skin dry with paper towels. Season both sides with salt and white pepper.

Tip: Dry skin browns better, and scoring helps the chicken cook evenly and absorb sauce.

Step 2: Make the honey garlic sauce

In a bowl, whisk together garlic, soy sauce, rice vinegar, honey, and water. Set aside.

Tip: Mixing the sauce first keeps cooking smooth and prevents over-browning the garlic later.

Step 3: Pan-fry until golden

In a pan over medium heat, add cooking oil. Place chicken skin side down and cook for 3–4 minutes until golden brown. Flip and cook another 3–4 minutes. Carefully remove excess rendered fat from the pan.

Tip: Let the chicken sear without moving it at first so the skin can develop a deep golden color and richer flavor.

Step 4: Simmer in the sauce

Reduce the heat to low. Return chicken skin side down and pour sauce into the pan. Simmer for about 6 minutes. Flip and cook another 6 minutes until chicken reaches 165°F internally.

Tip: Gentle simmering keeps the chicken tender while absorbing flavor.

Step 5: Reduce to a glaze

Increase the heat to high and cook for 3–5 minutes until the sauce thickens and becomes glossy. Spoon sauce over the chicken as it reduces.

Tip: The sauce will thicken quickly at this stage — watch closely to prevent burning.

Ingredients
  

For the chicken

  • 4 pieces chicken thighs, boneless, skin-on
  • â…› teaspoon salt

  • 1 tablespoon cooking oil, high-smoking-point oil

For the sauce

  • To prepare the chicken, trim any excess skin or fat from the chicken thighs. Using a knife, make shallow cuts about 1 inch apart into the meat without slicing all the way through to help the chicken absorb flavor and cook evenly. Pat the skin dry thoroughly with paper towels and remove any remaining pinfeathers.
  • To season the chicken, sprinkle both sides with the salt and white pepper, pressing lightly so the seasoning adheres.
  • To make the sauce, in a bowl, combine the garlic, soy sauce, rice vinegar, honey, and water. Whisk until well combined and set aside.
  • To pan-fry the chicken, in a pan over medium heat, add 1 tablespoon of cooking oil. Place the chicken skin-side down and cook for about 3 minutes until golden brown. Flip and cook for another 3 minutes. Carefully drain and discard excess oil from the pan.
  • To simmer and glaze, reduce the heat to low and return the chicken to the pan skin-side down. Pour in the sauce and simmer gently for about 6 minutes. Flip the chicken and cook for another 6 minutes, spooning the sauce over the top occasionally. Increase the heat to high and cook for about 5 minutes until the sauce reduces to a thick, glossy glaze that coats the chicken.
  • To serve, spoon the sauce over the chicken and serve whole or sliced into bite-sized pieces while hot.
