Crispy Teriyaki Blooming Salmon Recipe

Serves: 2 to 4
Prep time: 20 minutes
Cook time: 10 minutes

For the salmon:
1 pound salmon fillet, skin on
1/10 teaspoon salt
1/10 teaspoon white pepper
1/2 cup cornstarch
4 cups oil, for frying
1 ½ tablespoons scallions, julienned, for garnish

For the teriyaki sauce:
1 cup chicken stock
2 tablespoons soy sauce
1 tablespoon sake (optional)
2 tablespoons sugar
1 tablespoon cornstarch
3 tablespoons water
1 ½ tablespoons scallions, minced

Crispy Teriyaki Blooming Salmon Instructions

1. Prepare the salmon:

      • Using a sharp knife, slice each salmon fillet diagonally into a crisscross pattern, being careful not to cut through the skin. Space each cut about ½ inch apart.
      • Season the fillets with salt and white pepper.
      • Lightly coat the salmon with cornstarch, shaking off any excess.

2. Fry the salmon:

      • In a pot over high heat, heat the oil to 325°F (163°C).
      • Carefully lower one fillet at a time into the oil. Fry until golden brown and crispy, about 3 minutes. Remove and drain on a paper towel-lined plate.
      • Repeat with the remaining salmon.

3. Make the teriyaki sauce:

      • In a saucepan over medium heat, combine chicken stock, soy sauce, sake (if using), and sugar. Bring to a simmer.
      • In a small bowl, mix the cornstarch with water to make a slurry. Slowly whisk it into the simmering sauce until it thickens.
      • Add the minced scallions and stir well. Remove from heat.

4. To serve:

      • Drizzle the teriyaki sauce over the crispy salmon or serve it on the side as a dipping sauce.
      • Garnish with julienned scallions and enjoy!

Tips & notes

      • Use skin-on salmon: It helps hold the blooming shape together during frying and adds extra texture.
      • No sake? You can omit it or replace it with mirin or a dash of white wine.
      • Serve it with balance: In Asian meals, crispy dishes like this are often enjoyed alongside soup and lots of vegetables for a complete, harmonious meal.
