1 piece of salmon fillet, about 8 ounces
5 gloves of garlic
5 slices of ginger
1 stalk of chopped scallion
2 tablespoons of oil
2 tablespoons of dark soy sauce
1 tablespoon of light soy sauce
1 tablespoon of shaoxing wine
1 tablespoon of oil
A pinch of salt
A pinch of pepper
A pinch of sugar
To make the sauce, in a bowl, add 2 tablespoons of dark soy sauce (dark soy sauce is for the color), 1 tablespoon of light soy sauce (light soy sauce is for the taste), 1 tablespoon of shaoxing wine, 1 tablespoon of oil, a pinch of salt, a pinch of pepper, and a pinch of sugar.
In a hot pan, add 2 tablespoons of oil, put in the salmon fillet, and cook each side for about 2 minutes. Then add 5 gloves of garlic, 5 slices of ginger, 1 stalk of chopped scallion and cook until the aroma comes out.
