Marinate
A dash of soy sauce
1 tablespoon of white wine
A pinch of white pepper
1/2 egg white
1/2 teaspoon of cornstarch and 1 tablespoon of water
A pinch of baking powder

Sauce:
1 tablespoon of soy sauce
2 tablespoons of dark soy sauce
1 tablespoon of oyster sauce
1 tablespoon of white wine
1 tablespoon of sugar
A pinch of white pepper
A dash of sesame oil

In a big bowl add a dash of soy sauce, a dash of white wine, a pinch of white pepper, 1/2 egg white, 1/2 teaspoon of cornstarch and 1 tablespoon of water, a pinch of baking soda and mix well. Then mix in 8 ounces of beef slices, and marinate for 30 minutes.

In a small bowl, mix 1 tablespoon of soy sauce, 2 tablespoons of dark soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of white wine, 1 tablespoon of sugar, a pinch of white pepper, a dash of sesame oil.

In a hot pan, add 4 tablespoons of oil, and pan fry the beef until medium well. Discharge any excess of oil.

In the pan, add 2 tablespoons of oil, add 1 large sliced tomato, cover the lid for about 2 minutes, take out the lid and stir until the juice comes out.

Now add back the onion, beef slices, and the sauce. Stir fry and mix well. Add scallions, and lastly, add 1/2 teaspoon of cornstarch and 1 tablespoon of water to thicken the sauce.
