Steamed Garlic Shrimp Recipe

Cook time: 5 minutes
For the steamed shrimp with glass noodles:
6 ounces glass noodles
3 cups hot water, for soaking
8 large shrimp, deveined
For the sauce:
10 cloves garlic, minced
1 medium red finger hot pepper, minced
1 tablespoon soy sauce
1 tablespoon oyster sauce
Pinch of white pepper
2 tablespoons oil
2 tablespoons scallions, thinly sliced
Steamed Garlic Shrimp Instructions
To prepare the shrimp:
- Butterfly the shrimp from the back side, without removing the shell. Do the same with the rest. (The shells help to protect the shrimp, so they won’t be overcooked. They can be easily peeled after it’s fully cooked.)
To prepare the glass noodles:
- In a bowl, add the glass noodles, and pour in the hot water. Soak for 3 minutes until softened. Drain.
To make the sauce:
- In a bowl, mix together the garlic, finger hot pepper, soy sauce, and oyster sauce.
To steam:
- On a plate, place the glass noodles on it, arrange the shrimp over them, and scope the sauce over the shrimp.
- In a steamer over high heat, bring water to a boil. (Make sure that the water is at a full boil. We shorten the cooking time, so the shrimp won’t be overcooked.)
- Transfer the shrimp and glass noodles inside. Steam over high heat for about 3 minutes until the shrimp turns pink. Carefully remove. (After the shrimp turns pink, it’s safe to remove it. Did you know that the shrimp will continue to cook from the residual heat even after it’s being removed from the steamer.)
To serve:
- Sprinkle the scallions over the top.
- In a small pan over high heat, pour the oil inside. Heat it up until smoking hot.
- Pour the hot oil over the dish. (All the aroma will come out instantly!) Serve!
