For the spare ribs:
2 pounds spare ribs
4 cups water
1 tablespoon of rice vinegar
For the sauce:
1 tablespoon fermented black beans
1 teaspoon ginger, minced
6 cloves garlic, minced
2 tablespoons oil
1 tablespoon soy sauce
1 tablespoon of dark soy sauce
1 tablespoon oyster sauce
1 tablespoon cornstarch
For garnish:
1 mini sweet peppers
2 tablespoons scallions
Instructions
To cut the spare ribs:
- Remove the silver skin. (Without removing it, it will make the ribs very tough.)
- Cut them into bite-size pieces.
To prepare the spare ribs:
- In a large mixing bowl, place the spare ribs inside. Pour in the water and rice vinegar. Mix well. Soak for 5 minutes. (The water mixture helps to remove the excess blood and tenderizes the ribs.)
- Discard the liquid, and pat dry the spare ribs.
- Use a fork to poke holes all over the spare ribs. (It helps the marinate to penetrate faster. It also speeds up the cooking process.)
To make the aromatic oil:
- In a bowl, add the fermented black beans, ginger, and garlic.
- In a small pan, pour the oil inside and heat it up until smoking oil. Pour the hot oil over the fermented black beans, ginger, and garlic.
To marinate:
- In the mixing bowl with the spare ribs inside, add the soy sauce, dark soy sauce, oyster sauce, and cornstarch. (Cornstarch helps to seal the juice of the spare ribs inside, so they won’t dry out.)
- Mix well. Followed by the aromatic oil. Combine.
- Marinate them for 10 minutes.
To steam:
- Place the spare ribs on a single layer on a plate.
- In a large steamer over high heat, bring water to a boil. Transfer the spare ribs inside. Cover the steamer with a lid. Steam over high heat for 20 minutes until completely cooked through.
- Uncover and remove the spare ribs. (At this point, the internal temperature of the ribs should be around 195 degrees F or 91 degrees C.)
To serve:
- Garnish them with mini sweet peppers and scallions. Serve!
