Did you know that Chinese people also eat many different types of salad or cold dishes? The words liángbàn (涼拌) translate to “cold mix” or salad. How do you make a Chinese salad? So it’s super nourishing and shockingly tasty. Let’s get started with the Chinese Spinach Glass Noodles Salad! All you need is 15 minutes!

Serving: 2 to 4

Cook time: 5 minutes
For the eggs:
3 large eggs
Pinch of salt
2 teaspoons oil, separated
For the salad:
1 cup carrots, shredded
2 cups spinach
6 ounces glass noodles
2 tablespoons scallions, minced
3 cloves garlic, minced
3 medium red finger hot peppers
1/2 tablespoon chili flakes
2 tablespoons oil
For the sauce:
3 tablespoons soy sauce
1 tablespoon Chinkiang vinegar
1/2 tablespoon sugar
Instructions
To prepare the eggs:
- In a bowl, crack in the eggs, and season them with a pinch of salt. Whisk.
- In a pan over medium heat, add 1 teaspoon of oil, and half of the egg mixture. Cook until both sides are set for about 2 minutes. Do the same with the rest.
- Slice the eggs into strips.
To prepare the glass noodles, carrots and spinach:
- In a pot over high heat, bring water to a boil. Blanch the glass noodles for 30 seconds. Remove and drain.
- In the same pot over high heat, blanch the carrots for 20 seconds. Remove and drain.
- In the same pot over high heat, blanch the spinach for 10 seconds. Remove and drain.
To prepare the sauce:
- In a bowl, add the soy sauce, Chinkiang vinegar (or other types), and sugar. Whisk.
To assemble the salad:
- In a large mixing bowl, add the glass noodles, spinach, carrots, eggs, scallions, garlic, red finger hot peppers, and chili flakes (or opt out of the red finger hot peppers and chili flakes if you can’t consume spicy foods).
- In a small pan over high heat, add 2 tablespoons of oil, and heat it up until smoking hot.
- Pour the hot oil over the scallions, garlic, red finger hot peppers, and chili flakes.
- Pour the sauce over the salad and toss everything together.
