Shrimp Cheung Fun Recipe

Today we are going to make Shrimp Cheung Fun (Steamed Rice Noodle Rolls Dim Sum Recipe). Talking about Cheung Fun (Rice Noodle Rolls), there are many ways to make it. And after testing different combinations of ingredients, I found the perfect way to make Cheung Fun. It’s silky, smooth, and slightly translucent. It’s over the top delicious!

Shrimp Cheung Fun Recipe

Serves: 4
Prep time: 25 minutes
Cook time: 20 minutes

For the shrimp:
5 ounces (12 to 16 pieces) medium shrimp, peeled and deveined
Pinch of salt
Pinch of white pepper
½ teaspoon rice wine
½ teaspoon sesame oil
½ teaspoon cornstarch
1 ½ teaspoons water

For the sauce:
4 tablespoons hot water
2 tablespoons sugar
2 tablespoons soy sauce
1 tablespoon dark soy sauce
1 tablespoon oyster sauce
½ teaspoon sesame oil

For the Cheung Fun:
½ cup rice flour
2 tablespoons tapioca starch
2 tablespoons wheat starch
1 ½ cups water
2 tablespoons avocado oil, separated, for brushing

Shrimp Cheung Fun Instructions

  1. To make the sauce, in a bowl, add in the hot water and sugar. Whisk until dissolved. Pour in the soy sauce, dark soy sauce, oyster sauce, and sesame oil. Mix well.
  2. To marinate the shrimp, in a bowl, mix in the salt, white pepper, rice wine, sesame oil, and cornstarch slurry (½ teaspoon of cornstarch and 1 ½ teaspoons of water). Place in the peeled and deveined shrimp. Combine and marinate for 10 minutes. Transfer the shrimp to a plate in a single layer.
  3. To steam the shrimp, in a steamer over high heat, bring it to a boil. Place in the shrimp, cover the lid, and steam until completely cooked, 2 minutes. Remove and set aside.
  4. To make the Cheung fun, whisk together the rice flour, tapioca starch, wheat starch, and water.
  5. In a heat-resistant container (in my case, it’s a 9×9 cake pan), brush about 1 teaspoon of avocado oil on it. Whisk the flour and starch mixture again, and pour about ½ cup of the mixture in the container.
  6. To steam, in a large steamer over high heat, bring it to a boil. Place in the container, and move it around a bit to make sure everything is leveled. Cover the lid and steam for 4 minutes until cooked. Remove the container and cool down for 2 minutes.
  7. On a clean working surface, brush a bit of avocado oil on it.
  8. Place 3 to 4 pieces of shrimp on the Cheung Fun, and roll it up with a plastic bowl scraper.
  9. Transfer the Cheung Fun to the working surface. Trim off the two sides. Do the same with the rest. Serve with the sauce.
