2 tablespoons dark soy sauce
2 tablespoons oyster sauce
4 tablespoons water

For the noodles:
1 package (16 oz) lo mein noodles
2 tablespoons oil, separated
1/2 medium onion, sliced
3 medium shiitake mushrooms, sliced
1/2 cup cabbage, thinly sliced
1/2 cup bean sprouts
2 stalks scallions, sliced

Shrimp Lo Mein Instructions

To season the shrimp:
  • In a mixing bowl, add the deveined shrimp. Season it with salt and white pepper. Mix well.
To make the sauce:
  • In a bowl, mix together the soy sauce, dark soy sauce, oyster sauce, and water. Whisk.
To cook the noodles:
  • In a pot over high heat, bring water to a boil. Place the Lo Mein noodles inside, and cook for about 2 minutes until al dente. (Avoid overcooking the Lo Mein – they would become mushy when we stir fry it.)
  • Rinse the Lo Mein with cold water to stop cooking. Drain.
To stir fry:
  • In a wok over high heat, pour 1 tablespoon of oil in it. Place the shrimp and garlic inside. Then stir fry until pink for about 1 minute. Remove.
  • In the same wok over high heat, pour 1 tablespoon of oil in it. Followed by the onion, shiitake mushrooms, and cabbage. Stir fry until softened for 30 seconds. Remove.
  • In the wok over high heat, pour 1 tablespoon of oil in it. Return the Lo Mein and pan fry for 1 minute.
  • Return the vegetables and shrimp. Then pour the sauce in it. Mix well.
  • Lastly, add the bean sprouts and scallions. Quickly stir them together.
