Steamed Chive Dumplings are delicate, juicy, and bursting with flavor. A fragrant filling of Chinese chives, carrots, and scrambled eggs is wrapped in tender wonton wrappers and steamed to translucent perfection. Whether you’re craving a light snack or a plant-forward appetizer, these dumplings are surprisingly easy to make and seriously delicious!

Serving: 12 dumplings

For the steamed dumplings:
12 wonton wrappers
1 1/2 cups Chinese chives, chopped
3 tablespoons carrots, minced
1 tablespoon sesame oil
1 tablespoon oyster sauce
Pinch of salt
Pinch of white pepper

For the scrambled eggs:
1 tablespoon oil
3 large eggs
Pinch of salt

For the dipping sauce:
2 tablespoons soy sauce
2 tablespoons Chinkiang vinegar (or other vinegar)
1 tablespoon chili oil

Instructions

1. Prepare the scrambled eggs:

      • In a bowl, whisk together the eggs and a pinch of salt.
      • Heat oil in a pan over medium heat. Pour in the eggs and scramble into small, fully cooked pieces.
      • Transfer to a plate and let cool to room temperature.

2. Make the filling:

      • In a large mixing bowl, combine Chinese chives, minced carrots, and sesame oil.
      • Add the cooled scrambled eggs, oyster sauce, salt, and white pepper. Mix until evenly combined.

3. Assemble the dumplings:

      • Lay a wonton wrapper flat on a clean surface.
      • Brush the edges with water. Add about 1 tablespoon of filling in the center.
      • Gather the edges and pinch together to seal tightly. Repeat with the remaining wrappers and filling.

4. Steam the dumplings:

      • Place dumplings in a bamboo steamer lined with parchment or cabbage leaves to prevent sticking.
      • In a large steamer over high heat, bring water to a boil. Place the bamboo steamer inside, cover, and steam for about 6 minutes until dumplings are fully cooked and translucent.
      • Carefully remove the steamer from heat.

5. Serve:

      • In a small bowl, mix soy sauce, Chinkiang vinegar, and chili oil.
      • Serve the steamed chive dumplings with the dipping sauce and enjoy immediately.

Tips & notes

      • Use Chinese chives: Chinese chives are more pungent and flavorful than regular ones — perfect for dumplings.
      • Oil prevents sogginess: Mixing sesame oil with the veggies first helps control moisture, so your filling stays balanced.
      • Customize the wrap: You can use store-bought wonton or dumpling wrappers — just make sure to seal them tightly before steaming.
