For the scrambled eggs:
1 tablespoon oil
3 large eggs
Pinch of salt
For the dipping sauce:
2 tablespoons soy sauce
2 tablespoons Chinkiang vinegar (or other vinegar)
1 tablespoon chili oil

1. Prepare the scrambled eggs:

- Transfer to a plate and let cool to room temperature.
