Rice Paper Shrimp Dumplings Recipe

For the filling:
½ pound small shrimp, deveined
Pinch of salt
Pinch of white pepper
1 teaspoon sesame oil
For the rice paper:
6 sheets rice paper
1 cup water
1 tablespoon oil
For the dipping sauce:
1 tablespoon soy sauce
1 tablespoon Chinkiang vinegar
1 tablespoon chili oil
Instructions
1. Season the shrimp:
- Place the deveined shrimp on a plate. Season with salt, white pepper, and sesame oil. Mix well.
2. Steam the shrimp:
- In a large steamer over high heat, bring water to a boil. Place the shrimp inside and cover with a lid.
- Steam until the shrimp turn pink and are fully cooked, about 2 minutes. Remove and set aside.
3. Make the dipping sauce:
- In a small bowl, combine soy sauce, Chinkiang vinegar, and chili oil. Stir to mix.
4. Assemble the dumplings:
- Stack the rice paper sheets and cut them in half.
- Dip one piece in water for 1–2 seconds—it will continue to soften after removal.
- Fold the two corners toward the center to form an envelope shape.
- Place about 1 tablespoon of cooked shrimp in the center. Fold the rice paper over the filling and pleat it closed. Trim excess rice paper if needed.
- Lightly brush each dumpling with oil to prevent sticking. Place them on a bamboo steamer.
5. Steam the dumplings:
- In a large steamer over high heat, bring water to a boil. Transfer the dumplings into the steamer and steam for 1 minute.
- Remove and serve immediately with the dipping sauce.
