How to Cook Rice for Fried Rice?
If you’re planning ahead, overnight rice is always a great option. But if you’re making fried rice today, freshly cooked rice works too.
For Overnight Rice
Cook the rice normally according to package directions.
Once cooled, transfer it to a container and refrigerate overnight.
For Freshly Cooked Rice
Freshly cooked rice can make excellent fried rice when prepared properly.
For jasmine rice, I usually use a 1:1 rice-to-water ratio, which creates a slightly firmer texture that’s ideal for fried rice. Keep in mind that different varieties of rice may require more or less water, so it’s always best to follow the package directions as a starting point and reduce the water slightly if you’re planning to make fried rice.

Step 4: Stir-Fry the Shrimp
In a wok over high heat, add 1 tablespoon of cooking oil.
Add the shrimp and garlic. Stir-fry for about 1 minute, just until the shrimp begin turning pink.
Remove immediately.
Tip: We’re intentionally undercooking the shrimp slightly at this stage. It will finish cooking later when we return it to the wok, helping it stay tender and juicy instead of overcooked.
Step 5: Stir-Fry the Vegetables
In the same wok over high heat, add 1 tablespoon of cooking oil.
Add the onion and carrots. Stir-fry for about 30 seconds until fragrant.
Remove from the wok.
Tip: Cooking ingredients separately keeps the wok hot and prevents excess moisture from making the fried rice mushy.
Step 6: Make the Fried Rice
In the wok over high heat, add the remaining tablespoon of cooking oil.
Add the eggs and stir-fry until partially set.
Add the rice and stir-fry for about 1 minute, tossing and breaking up any clumps.
Season with the white pepper, fish sauce, and soy sauce. Toss quickly to coat the rice evenly.
