Wrapped in delicate cucumber ribbons, they’re filled with sweet corn, peas, and tomatoes, then paired with a zesty lime-fish sauce. These wraps are fun to make and even more fun to eat!

For the cucumber wraps:
1 cup steamed corn
1 cup steamed peas
1 large English cucumber
1/2 cup tomatoes, diced
1 small shallot, minced
1 tablespoon cilantro stems, minced
For the sauce:
3 medium limes (about 6 tablespoons)
6 tablespoons fish sauce
3 tablespoons sugar
3 garlic cloves, minced
1 medium red finger pepper, sliced
Instructions
1. Make the sauce:
- Roll the limes on the counter to soften them, then slice and juice into a bowl.
- Add the fish sauce, sugar, minced garlic, and sliced red finger pepper (or substitute with another chili, or omit for a non-spicy version).
- Whisk well and set aside.
2. Prepare the filling:
- In a mixing bowl, combine steamed corn, peas, diced tomatoes, minced shallot, and cilantro stems.
- Add 2 tablespoons of the prepared sauce and toss to mix. Set aside.
3. Slice the cucumber:
- Using a vegetable peeler, slice the cucumber lengthwise into long, thin ribbons.
4. Assemble the wraps:
- Take a cucumber ribbon and fold it into a cone shape.
- Spoon some filling into the cone. Fold the ribbon inward and tuck the rest of the strip inside to seal.
- Repeat with the remaining cucumber ribbons and filling.
5. Serve:
- Serve the cucumber wraps chilled with the tangy sauce on the side for dipping. Enjoy!
