Chicken Green Bean Stir Fry Recipe

For the chicken:
2 pieces chicken breast, or replaced with chicken thighs
Pinch of salt
Pinch of white pepper
1 tablespoon rice wine
1 teaspoon soy sauce
1 tablespoon cornstarch
1 tablespoon oil
For the sauce:
1 tablespoon soy sauce
1 tablespoon dark soy sauce
2 tablespoons oyster sauce
1/2 cup chicken stock
1 teaspoon cornstarch
1 tablespoon water
For the stir-fried:
3 tablespoons oil, separated
2 cups green beans
½ large onion, cubed
5 cloves garlic, minced
½ teaspoon ginger, minced
Chicken Green Bean Stir Fry Instructions
To prepare the chicken:
- Cut the chicken breast against the grain into about ¼ inch slices. (Chicken breast has long muscle fibers. If you slice along the grain, the cooked chicken will be tougher and chewier.) Place them in a mixing bowl.
- First, add salt, which helps break down the protein by targeting muscle fibers and collagen. Mix the chicken until it is fully absorbed with the salt.
- Next, incorporate the following ingredients: white pepper, rice wine, soy sauce, cornstarch, and oil. Mix everything thoroughly. Marinate for at least 5 minutes.
To prepare sauce:
- In a mixing bowl, mix together the soy sauce, dark soy sauce, oyster sauce, chicken stock, and cornstarch slurry.
To stir fry:
- In a wok over high heat, add 2 tablespoons of oil, and the marinated chicken. Stir-fry until completely cooked through for about 3 minutes. Remove.
- In the wok over high heat, add 1 tablespoon of oil, and the green beans. Stir-fry until softened. Followed by the onion, ginger, and garlic. Stir-fry until aromatic for about 10 seconds.
- Return the chicken and add the sauce. Stir fry everything together. Serve it with rice or noodles.
