Achieve Silky Steamed Eggs Easily!

Are you tired of your silky steamed eggs with shrimp turning out with a bunch of air pockets? Don’t worry! Today, I’ll share with you all my tips and tricks! It will come out super silky every single time!

Serving: 2
Prep time: 10 minutes
Cook time: 15 minutes

Ingredients:
5 large eggs (1 cup, or 250 ml)
1/10 teaspoon salt
1 ½ cups lukewarm chicken stock (356 ml) (98 to 105 degrees F)
8 large shrimp, peeled and deveined, 26/30
2 tablespoons scallions, thinly sliced
1 ½ tablespoons oil
1 ½ tablespoons soy sauce

Instructions

To prepare the shrimp :
  • Use a knife to carefully butterfly the deveined shrimp, and slice a hole in the center. Insert the tail through the hole. Do the same with all of them.
To prepare the eggs:
  • In a mixing bowl, add the eggs and salt. Whisk. Pour in the lukewarm chicken stock. Whisk. (The ratio of eggs to liquid should be about 1 to 1 ½)
  • Through a fine mesh strainer, pour the egg mixture into a serving bowl to remove air pockets. (This is another step to ensure that we have super silky steamed eggs.)
To steam:
  • Place the serving bowl on a steaming rack and cover it with a plate.
  • In a large pot over high heat, bring water to a boil. Turn to low heat, transfer the steaming rack on it, and cover the lid. Steam until the eggs are cooked through for about 15 minutes.
  • Uncover, and add the shrimp to the steamed eggs. Cover up with the lid. Over low heat, steam for 2 minutes.
  • Carefully take out the serving bowl.
To serve:
  • Sprinkle the steamed eggs with scallions.
  • In a small pan over high heat, add the oil, and heat it up until smoking hot. Carefully pour the hot oil over the steamed eggs and scallions. (This will add another dimension of aroma to the dish.)
  • Lastly, drizzle the soy sauce over the steamed eggs. Enjoy!
