Beef Chow Fun Recipe: Better Than Takeout!

Beef Chow Fun Recipe

Serving: 2 to 4
Prep time: 25 minutes
Marinate time: 30 minutes
Cook time: 5 minutes

For the beef and marinate:
1 pound beef flank, thinly sliced against the grain
Pinch of salt
Pinch of white pepper
2 tablespoons Shaoxing wine
1 egg white
1 tablespoon cornstarch
3 tablespoons water
1 tablespoon oil

For the sauce:
1 tablespoon soy sauce
2 tablespoons dark soy sauce
2 tablespoons oyster sauce
4 tablespoons water
Pinch of white pepper

For the noodles:
1 package hor fun noodles
5 tablespoons oil, separated
1 medium onion, sliced
3 stalks scallions, sliced
1 cup mung bean sprouts

Beef Chow Fun Instructions

To marinate the beef:
  • In a mixing bowl, add the beef flank inside. Marinate it with salt. Mix until the beef has fully absorbed the salt.
  • Then add the white pepper, Shaoxing wine, egg white, cornstarch slurry (1 tablespoon of cornstarch and 3 tablespoons of water), and oil. Thoroughly combine.
  • Marinate for 30 minutes.
To prepare the hor fun noodles:
  • The store brought hor fun noodles are very firm. To overcome this challenge, place the hor fun noodles in a microwave, and heat it for 3 minutes.
  • Cut the hor fun noodles into 1 inch pieces, and separate them from one another.
To make the sauce:
  • In a bowl, mix together the soy sauce, dark soy sauce, oyster sauce, water, and white pepper
To stir fry:
  • In a wok over high heat, pour about 2 tablespoons of oil in it. Transfer the beef inside. Stir fry it for about 3 minutes. Remove.
  • In the wok over high heat, add about 1 tablespoon of oil, add the onion, and cook until aromatic for 30 seconds. Remove the onion.
  • In the wok over high heat, add 1 tablespoon of oil. Place the hor fun noodles inside. Use a pair of chopsticks to gently cook them until aromatic for 1 minute.
  • Return the beef and onion. Then add the sauce to the wok. Use a pair of chopsticks to mix everything.
  • Lastly, add the bean sprouts and scallions. Toss together.
More cooking tips:
  • Hor fun noodles are made with rice, water, and sometimes starch. For stir-frying, it’s best to choose the ones with starch in it. Starch makes the rice noodles more durable and less likely to break apart.
  • In order to get the smoky wok hei, make sure the heat is on the highest for the entire time.
  • When stir-frying the hor fun noodles, avoid using a spatula. It’s best to use chopsticks or tongs, so the hor fun is less likely to break apart.
