Ingredients

For the filling

  • pounds ground pork
  • Pinch of salt
  • Pinch of white pepper
  • Pinch of sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger, grated
  • ½ cup chicken stock
  • 3 stalks scallions, thinly sliced

For the soup dumplings

  • 6 sheets dumpling wrappers, Shanghai-style
  • ¾ cup chicken stock

For the finishing sauce (optional)

Instructions

  • To make the filling: In a large mixing bowl, add the ground pork and salt. Mix well until the pork becomes slightly sticky. Add the white pepper, sugar, soy sauce, dark soy sauce, Shaoxing wine, sesame oil, and ginger. Mix until well combined. Gradually pour in the ½ cup chicken stock, a little at a time, mixing well after each addition. Lastly, fold in the scallions until evenly distributed.
  • To assemble the soup dumplings: Divide the pork filling among 6 heatproof bowls. Pour the ¾ cup chicken stock among the bowls, adding enough to nearly fill each one. Place a Shanghai-style dumpling wrapper over the top of each bowl.
  • To steam the soup dumplings: Bring water in a large pot to a boil over high heat. Place the bowls on a steaming rack and carefully set the rack over the boiling water. Cover and steam for about 12 minutes, or until the pork is completely cooked through and reaches an internal temperature of at least 160°F (71°C). The exact cooking time will depend on how much filling you use.
  • To finish and serve: Carefully remove the bowls from the steamer. Top with the scallions and julienned ginger. If desired, drizzle with the chili oil, soy sauce, and Chinkiang vinegar. Serve immediately.

Notes

  • Mix the pork with salt first: This helps the pork become sticky and better incorporate the chicken stock for a juicy filling.
  • Add the stock gradually: Mix in a little chicken stock at a time, allowing it to incorporate before adding more.
  • Use different wrappers: Dumpling wrappers, wonton wrappers, or rice paper can all work. Different wrappers will give you slightly different textures.
  • Choose the right bowl: Use small heatproof bowls that are safe for steaming, and make sure your wrappers are large enough to cover the tops.
  • Divide the filling evenly: Keeping the portions similar helps all 6 bowls finish cooking around the same time.
  • Check for doneness: The pork should reach an internal temperature of at least 160°F (71°C). Cooking time can vary depending on the amount and thickness of the filling.
  • Be careful when serving: The bowls and broth will be very hot straight from the steamer.
