Crispy Rice Paper Crab Omelet is a quick, golden, and crackly rice paper omelet filled with crab meat, egg, scallions, and carrots, served with homemade sweet chili sauce.

Ingredients

For the rice paper crab omelet

  • ½ cup crab meat
  • Pinch of salt
  • Pinch of white pepper
  • 1 sheet rice paper
  • 1 large egg
  • 1 stalk scallions, sliced
  • ¼ cup carrots, shredded
  • 1 tablespoon cooking oil

For the sweet chili sauce

  • ½ cup red chili pepper, minced
  • ½ cup sweet pepper, minced
  • 10 cloves garlic, minced
  • 1 cup water
  • 6 tablespoons rice vinegar
  • 6 tablespoons sugar
  • 1 teaspoon salt

For the slurry

  • 1 tablespoon cornstarch
  • 3 tablespoons water

Instructions

  • To season the crab meat: On a plate, combine the crab meat with the salt and white pepper. Mix well until evenly seasoned.
  • To make the omelet: Heat a pan over medium heat and place the rice paper directly into the pan. Crack the egg and spread it evenly across the surface. Top with the crab meat, scallion, and carrots.
  • To fold and crisp: Using a spatula, fold the rice paper in half. Drizzle the cooking oil around the omelet and cook until golden and crispy on both sides.
  • To make the sweet chili sauce: In a saucepan over medium heat, combine the red chili pepper, sweet pepper, garlic, water, rice vinegar, sugar, and salt. Whisk and bring to a gentle simmer. Pour in the cornstarch slurry and stir continuously until thickened. Remove from the heat and set aside.
  • To serve: Serve the rice paper crab omelet with the sweet chili sauce.

Notes

Do not soak the rice paper: Starting with dry rice paper helps it become extra crispy in the pan.
Add the oil later: Fold the omelet first, then drizzle in the cooking oil. This helps prevent the rice paper from cracking before it crisps.
Medium heat: Cook over medium heat so the rice paper turns golden without burning.
Sweet chili sauce: Stir the cornstarch slurry again before adding it to the sauce because the cornstarch can settle at the bottom.
Serve right away: This omelet is best enjoyed hot, while the rice paper is still crispy.
